Here is easy, healthy, vegan and quick recipe for your breakfast/brunch. 3 step recipe, you can prepare it with your leftover paratha and it taste delicious!

HOW TO MAKE PARATHA MAYONNAISE ROLL


INGREDIENTS

  1. ⅓ Cup grated carrots and cabbage
  2. ¼ Cup finely chopped bell pepper (capsicum) and onion (shallots)
  3. ⅓ Cup mayonnaise or add as required
  4. ¼ Teaspoon black pepper powder or add as required
  5. ¼ Teaspoon mustard powder- optional
  6. leftover or freshly prepared Parathas (if not available then wheat bread can be used)
  7. salt to taste
  8. Butter as required 
NOTE-  you can add any vegetable of your choice (finely chopped)

INSTRUCTIONS
  1. Finely chop all the vegetable using a good chopper to save you time. 
  2. Mix all the veggies with the mayonnaise, add salt and pepper and give it a good mix.  
  3. spread it over paratha and roll 
  4. serve it with ketchup.
